Pemanfataan Bayam Merah (Amaranthus Tricolor L) Bahan Pangan Lokal Untuk Pencegahan Stunting pada Balita Di Desa Madu Sari

The problem of stunting represents a chronic nutritional problem, influenced by the condition of the mother/mother-to-be, the fetal period and the infant/toddler period, including diseases suffered during the toddler period. The World Health Assembly resolution supports a comprehensive implementation plan on maternal, infant and young child nutrition that sets six global nutrition targets for 2025, one of which is to reduce the number of stunted children under the age of 5 by 40%. The problem of stunting in Indonesia is also still a serious threat that requires proper handling to improve children's health. One local food that has good nutritional content to prevent stunting is red spinach. Spinach is a vegetable rich in nitrates, red spinach can reduce the incidence of stunting because red spinach contains many vitamins needed by toddlers. This activity was carried out at the Posyandu for infants and toddlers in Madu Sari village, Sungai Raya, Kubu Raya with participants being cadres of posyandu for infants and toddlers. The activity begins by providing material to cadres regarding the utilization of red spinach leaves as local food ingredients. The material contains the purpose, benefits of spinach leaves and processing spinach leaves into various types of food, one of which is muffins. Based on the results of this activity, it shows that red spinach has various benefits and high nutritional value, making red spinach which has been processed into muffins has a sweet taste, soft and not hard texture according to the tastes of toddlers.
